Introduction

Ingredients
1 pound fresh okra, sliced into ½-inch rounds
1 cup yellow cornmeal
½ cup all-purpose flour
1 teaspoon salt
½ teaspoon black pepper
¼ teaspoon cayenne pepper (optional)
½ cup buttermilk
(or 1 egg beaten with 2 tablespoons water)
Vegetable oil for frying (peanut or canola recommended)
Instructions
Wash the okra thoroughly and pat it completely dry using paper towels.
Slice the okra into even rounds, discarding the tough stem ends.
In a shallow bowl, combine cornmeal, flour, salt, black pepper, and cayenne pepper.
Pour the buttermilk into a separate bowl.
Dip the okra slices into the buttermilk, then coat them well in the cornmeal mixture.
Heat about 1 inch of oil in a large skillet to 375°F (190°C).
Fry the okra in small batches for 3–5 minutes, turning occasionally.
Remove once golden brown and crispy, then drain on paper towels or a wire rack.
